Single release cleats can only be released by swinging your heal from centered to the outside of the pedal (probably also to the inside, but that's simply horrible to do). Multi-Release cleats can be released the same way but also by lifting up on the heal or up and to an outward angle. You can visit the Shimano.

Release the cleats from the pedals by twisting your heels outward.
Multiple release mode
Release the cleats from the pedals by twisting your heels in any direction. Releasing by lifting your heel requires particular practice.

These are the first cleats I've had and it's a good thing. I come out when I wouldn't have been able to if only single/sideways release, and it's saved me from a fall more than once.

If you want to be able to get out of your pedals fast, these multi release cleats are the way to go. Set your springs just tight enough so they don't pull out when you lift straight up and you're all set.

Ordered a pair for my shoes when I started indoor training on rollers in winter of 2010.
My original single-release Shimano cleats worked well, but were sometimes hard to release, and I wanted to have my feet free when I fell off the rollers. These worked well for that purpose.
I've taken to using these cleats on my everyday rides as well. I've never come out unexpectedly, but they release without effort when I need them too. I feel more confident that I won't get stuck in the cleat because of dirt or my own ineptitude during a panic stop.

The Sh-56 cleat works wonders for most Shimano pedals and many others. The exit release from any pedal is much more natural and forgiving than the standard SH-51 cleat.
Why Shimano continues to make the SH-51 cleat standard issue with their pedals is just mind boggling for me. The SH-51 is more of a racing cleat to reduce accidental release for very aggressive riders. These riders are the minority and are more knowledgeable about the gear so would have the knowledge to get the right cleat. Recreational riders just suffer with the SH-51 cleats until someone informs them how superior the SH-56 cleats are.

These are the cleats to keep you from crashing. Pull up hard enough and you will come out. "M" on the bottom.

I have recommended these for over a decade to other mountain riders especially in technical because they are multirealease -- twist in , out or pop up. Because Shimano SPD pedals usually have tension adjustments it is possible to get them set so that they hold well but in emergency you can get out of them and not be tangled in the bike or be able to pop out and plant a foot.
