The Shimano M310 shifters are indexed shifting only. They will mount to any bar that has a brake/shifter clamp area of 22.2mm.
Nitto makes mustache bars in both 22.2mm and 23.8mm diameters, so it will depend on which version you have.

If the gears are spaced like a 7speed yes, but most 5/6 gearing is not spaced like a 7-speed.
