The Apex caliper brakes should work, we've set them up on Zipp 303 Firecrest wheels which have a 26.4mm wide braking surface.

With road calipers, which come in 3 lengths.
You are going to be more limited by the mounting hole position than the actual caliper itself because your frame or fork will determine which reach version will work and the longer the reach the larger the tire.
If your bike will work with a 57mm reach brake, the Paul Comp Racer brake will give you the most clearance.
