I want to put a shimano 9 speed cassette on a freehub that accepts up to an 11 speed cassette. What spacer(s) do I need to pull it off?

You will need a 1.85mm cassette spacer, this spacer is designed to space the cogs in the middle of a Dura Ace cassette.

I have a Shimano Deore 9 speed 9-26 cassette. It will be going on a 10 speed hub that fits my cassette and my dropouts. Is this the correct spacer?

Shimano 9 and 10-speed cassettes use the same freehub so you shouldn't need any additional spacers. This spacer would be to replace a lost or missing space you would have already had.
