Generally speaking most bikes with 8-speeds or more use cassettes. 7-speed bikes can be tricky because gear clusters with 7 gears are widely available as either cassette or freewheels.
Cassettes will also have a lockring to hold it onto the hub freewheels do not.

Shimano is my Gruppo of choice. Easy adaptability and ease of switching out. Ultegra is a great choice and price point for anyone wanting to step up from basic components.
