It is really going to depend on the front crank gearing combined with the rear cassette ratio.
For most combinations you should be able to use a short cage with a double crank and medium with a triple.

7-speed cassette bodies are not long enough for 8-10 speed cassettes. You'll likely need to replace your hub or rear wheel to one that is Shimano 8-10 speed compatible.
